You can see how burned the first stage is at sep. That is due to "plume re-circulation". As the rocket climbs the air pressure drops and the plume flares out more and more. At some point it can even start to work its way up the stack a bit and scorch the paint.

Cool! I guess it's a jettison of 1st stage. Interestingly there's no exhaust behind 2nd stage, probably due to hydrogen burning, thats almost transparent.

Actually, it had.
I compared this video to TV footage of the launch that was broadcast live and it doesn't seem to be slowed down that much, and some of the things you see on this footage occurs after the astronauts confirm S-II ignition on the TV footage.
Also, if you look closely after the engines become visible, you can just barely make out the glow of the J-2 engines on the second stage.

Addendum: It looks like ignition takes place at or just before 0:15 on this video.
